    Ferme de la Cabaillère raises Limousin cows (a meat breed) in the traditional way, according to the customs of our ancestors:
    the herd, comprising 100 mothers, transhumance from May 20 to October 20 on the high mountain pastures at altitudes of 1400 to 1800 metres, under the watchful eye of the cowherd.

    Summer: transhumance, winter: life in the cowshed and births.

    The short circuit:
    - The animals are raised on our farm, then taken to the slaughterhouse in Pamiers.
    - They are cut up in a specialized workshop close to the abattoir.
    - Delivery is made by us using a refrigerated vehicle.

    Traceability:
    - Each animal has a passport showing its age, breed, registration number (pink card) and a detachable green card indicating that it is in good health.
    - This passport follows the animal and is given to the slaughterhouse on arrival.
    - We then receive a weighing ticket with a serial number corresponding to the animal's number, which follows the carcass.
    - The cutting sheets include this slaughterhouse number.

    Veal and beef are for sale by order ONLY.

    Meat is marketed in 6 or 10 kg boxes as an assortment.
    It is vacuum-packed (individually), labeled, weighed and ready to eat or freeze.
