Well-known to the villagers, Ferme Les Vieux Près has been taken over by Romain and Christine, who have chosen to preserve the cheese-making heritage.
Situated at an altitude of 1000m, below the Col de Port, this farm produces organic raw cow's milk cheeses.
The herd:
The herd is made up of around 15 cows, mainly of the Brunes des Alpes and Montbéliardes breeds, renowned for their hardiness and adaptation to the mountain environment. They graze on the surrounding meadows throughout the year.
Responsible production:
The farm extends over some forty hectares, all of which are certified organic, enabling us to produce most of the hay needed to feed the herd over the winter period. This guarantees quality milk all year round.
In their brand-new cheese dairy, Romain and Christine process all the milk on site. The cheeses, matured for several months in the cellar, are then offered for sale. Depending on the season, other dairy products are added to the range.
The farm's values:
. Promote natural breeding: respect for natural cycles and animal needs.
. Prioritizing animal welfare: ensuring a healthy environment.
. Simple, healthy feed: use organic feed to nourish animals.
. Quality control: monitoring every stage of the process, from breeding to processing and sale.
Ferme Les Vieux Près embodies a model of sustainable, respectful agriculture, while offering authentic, tasty dairy products. A great initiative to discover in Ariège!
